The brewery say:
Brewed with locally grown malted barley, wheat and rolled oats. Primary fermented with a mixed culture including a blend of Brettanomyces strains isolated from Belgian Lambic producers. The third iteration of this beer is aged for four months and packaged completely unfruited and un-hopped to showcase the mixed fermentation yeast character in full. We get pineapple, orange juice, stone fruits and zesty citrus notes, and a subtle funk that will develop over time.
