Back in October, we made a challenge to our head brewer, Lally. The test? Something we’d never done before – a Christmas themed beer. Never one to back down from a task, the first phrase on his design sheet was simply “A beer that makes you feel like you’re in front of a roaring fire, even if you’re not”. Opting to go down the Imperial Stout route, we got on the phone to our pals over at Simpsons Malt to collaborate with them and use some of their newest specialty malts. With a grist bill of Chocolate, Double Roasted Crystal, Brown, Medium Crystal, and Aromatic malts, as well as our tried and trusted Extra Pale and Oats, we’ve complimented this big, bold stout with Cinnamon, Ginger and Nutmeg to impart a distinctly seasonal vibe; creating maybe our best Impy yet.
