100% spontaneous beer brewed with Texas Wildflower Honey in collaboration with @theveilbrewing.
In January 2018, Matt Tarpey and Dustin Durrance of The Veil joined us for the brew. We brewed a traditional wort of well water, malted barley, raw wheat, and aged hops. At knockout into the coolship, we added several hundred pounds of Texas Wildflower Honey. We then spontaneously fermented and slowly matured the beer in oak barrels for nearly four years before blending. The result is very true to its classical, Lambic-inspired roots. Cheers to our friends at The Veil for brewing with us and being compatriots in spontaneous fermentation! 5.8%
